2 blocks 4 blocks 8 blocks Melt Margarine in microwave
4 cups 8 cups 1.8 kg Cocoa
8 cups 16 cups 6.4 kg Sugar A
3 cups 6 cups 3 kg Liquid Egg A
30ml 60mL 120g Vanilla A
2 tsp 4 tsp 3 Tbsp Salt A
4 tsp 8 tsp 80g Baking Powder B
4 cups 8 cups 2.360 kg Flour B
2 cups 4 cups 8 cups Hot water

Convection oven: Low fan 325°F 25 to 30 min

Method:

1. Pour melted butter into bottom of mixing bowl, followed by cocoa. Mix on speed 1 until smooth, scraping down bowl as needed.
2. Add “A”, mix until combined.
3. Add “B”, blend in, then scrape bowl.
4. With mixer on slowly add Hot water, mix only until combined.
5. Pour into baking pans sprayed with oil
6. Bake until brownies bounce back when lightly touched in the center.
7. Cool, ice or dust with icing sugar (optional) and cut 8x12 unless otherwise instructed.
